How to stack a wedding cake

Cake stacking is a work of art if you want a perfect finish and so it is recommended that you visit a cake maker and seek professional advice or let them stack it for you. However if you wish to do it yourself, there are several steps. The process best known for stacking a cake is dowelling. This is a method which involves using thick plastic sticks which can be bought at most cake decoration suppliers.

Balance is a crucial factor so using a ruler, work out the four central points (square) of each cake and insert the plastic rods. Make a mark on the rods where the top of the cake meets them, then remove them and cut them to the size of the cake. Do this for each of the cakes, but obviously not for the top tier.

Once this is done, re-insert all of the rods and begin to stack the cakes. There should be a cake board which is exactly the size of the cake underneath each one. This will in effect be supported by the dowels.  To ensure safe delivery of each cake, it may be useful to use a large palette in order to not damage the icing of the cake. Once the cakes are stacked, wrap ribbon around each board and decoration.

It is not possible to stack fruit on top of sponge as fruit cake is incredibly heavy and it would flatten or misshape the sponge. If it all seems too much, you can always hire a cake stand which would make the whole process much simpler.
